At Hinch Distillery, prepare to see a first-generation family distillery with a focus on Irish whiskey’s heritage, sustainability, and a farm-to-glass mentality. Dr. Terry Cross has taken his experience of starting a vineyard and, with lessons learned, built a distillery, restaurant, and event space south of Belfast. The result is a well-crafted tour where your guide describes every element of the process. 

One of the standout features of this tour is how they incorporate sensory moments. After a short promotional video, the guide lets you smell malted, unmalted, and peated barley. Then, following a review of the milling process, you walk the floor of the distillery and hear a thorough explanation of how they make whiskey. And, even though there isn’t a warehouse on-site, you will get a chance to smell the angel’s share—and in a very creative way. Hinch also provides one of the most visually complete experiences I’ve ever seen when it comes to understanding barrel influence. 

The guide on my tour was exceptional and welcomed questions. During the tasting, they gave those that may have decided on the smaller tasting package an option to upgrade their tasting right on the spot. This is a well thought out piece of flexibility. Plus, they do tours seven days a week, which makes planning multiple distillery tours easier.
